The course is designed for winemakers and assistant winemakers, winery technical staff, senior cellar staff, winery enterprise managers and other specialised staff, such as technical suppliers. Its aim is to provide graduates with an excellent technical understanding of winemaking through provision of a relevant and coherent body of wine production and wine science knowledge, a science base that allows the underlying principles and concepts to be understood, and industry-relevant skills.

Gain hands-on skills in winemaking. Explore the sensory science of wine including taste, texture and smell. Learn winemaking and wine appraisal with a foundation in chemistry and microbiology. Understand the influences changing the wine industry.

Bachelor of Wine Science

The course is designed for viticulture technical officers and vineyard managers requiring the technical expertise for grape and wine production. The course integrates scientific theory with practical applications in viticulture. The course has the flexibility that elective subjects in wine science and agriculture may be taken depending upon the area of specialisation required. The course shares a common first year with the wine science course and a proposed combined degree in Wine Science and Viticulture.

Bachelor of Viticulture

The Bachelor of Horticulture will produce graduates with knowledge and skills in the science, management, business and production components of the horticulture supply chain. In particular, graduates will have the interdisciplinary knowledge necessary to address a range of contemporary problems facing the horticulture industries. Graduates will also have the cognitive and technical skills required to apply an appropriate combination of these principles to solve real problems and will have the written and oral communication skills to communicate with a range of audiences, using a range of strategies.
